As a foodie, few things make me happier than a very well executed meal. And this weekend, I has Texas barbecue for the first time; it was incredible! It inspired me to whip up my own version of the barbecue beef brisket sandwich that I devoured. My version is totally from scratch, but you’ll be surprised at how fast, easy and delicious it is! You probably have all of the ingredients just laying around your kitchen.
Aside from FoodGawker, FoodSpotting and Pinterest, my favorite resource for amazing food is my Betty Crocker Cookbook. If you’re craving barbecue, but don’t have expensive cuts of meat or time for a slow cooker, fear not. I love to make barbecue biscuit sliders when I’m short on ingredients and time. For the biscuits, I use this super fast and easy recipe from Betty Crocker. Secondly, I use this recipe for pulled pork on FoodGawker. If I don’t have nice cuts of meat, I substitute pork with chicken and it tastes exactly the same.
First, I prepare the biscuits and throw them in the oven so they can bake while I prepare the meat. Then, I sear my pork chop or chicken breast in a skillet on medium heat for 3-5 minutes per side. Then, I remove the meat and pull it apart until it resembles the look of pulled pork. Next, I mix the sauce (from the pulled pork recipe) with the meat and cook in the skillet for a few minutes, until the meat is caramelized. When the biscuits are baked and the meat is ready, simply split a biscuit and add as much meat as you want to make your perfect slider.
